There are several benefits to consuming sourdough bread as opposed to bread that is processed using yeast or other agents that speed up the fermentation process. Sourdough products have been known to be better for your gut health, they're higher in nutrients than "regular" bread, they raise blood sugar slowly, and they also are much easier to digest. With all of these benefits comes hard work. It takes a full two days from feeding my starter to be able to bake a loaf of my sourdough bread.
